- In a large skillet or pot over medium-high heat, brown the ground beef, breaking it apart with a spoon. Cook until no pink remains. Drain off any excess grease thoroughly to ensure a less greasy sloppy joe.
- Add the chopped onion and green bell pepper (if using) to the same skillet with the browned beef. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes. Stir in the minced garlic during the last minute of cooking until fragrant.
- Transfer the browned beef, onion, and bell pepper mixture to the slow cooker insert.
- Add the ketchup, brown sugar, yellow mustard, Worcestershire sauce, apple cider vinegar, chili powder, smoked paprika (if using), and beef broth or water to the slow cooker with the beef mixture.
- Stir all ingredients well to combine thoroughly. Season with salt and black pepper to taste, starting with about ½ teaspoon of salt and ¼ teaspoon of pepper, then adjust as needed after cooking.
